Raspberry Vanilla Overnight Oats

These raspberry vanilla overnight oats are an easy, healthy breakfast. Try this recipe for a delicious gluten-free, vegan treat in the morning. ($.97 per serving)

  • 3 1/4 cups coconut milk
  • 2 cups raspberries
  • 1 1/2 tsp vanilla extract
  • 1 tbs maple syrup
  • 3 cups rolled oats
  • 2 tbs mini chocolate chips

  1. Stir together the coconut milk, maple syrup, and vanilla extract. Add the oats and stir.
  2. Put half the oat mixture in the bottom of each jar, then add a layer of raspberries. Top with the remaining oatmeal and raspberries. Sprinkle with chocolate chips.
  3. Refrigerate overnight. In the morning, these can be served cold, or you can heat them briefly on the stovetop. (Note: If you’re heating them, you may want to add the chocolate chips after they’ve been heated.)
