HOMEMADE MUSHROOM AND ARUGULA PIZZA


This Homemade Mushroom and arugula Pizza is a fresh and healthy vegetarian recipe that's topped with Italian flavors like earthy veggies and Romano cheese!

Cook Time: 12 minutes
Total Time: 72 minutes
Servings: 4 - 6

Ingredients:
  • 1 8 oz. package mushrooms
  • 3 cups chopped fresh arugula
  • 3 cups grated mozzarella cheese
  • 1/2 cup Romano cheese
  • 1 14 oz. jar pizza sauce divided
  • 2 tsp. Italian seasoning
  • 2 tsp. red pepper flakes

Directions:
  1. Prepare dough using this recipe. Let dough rise for an hour.
  2. Thinly slice 1 package of mushrooms and rough chop 3 cups of fresh arugula. Set aside.
  3. Once the dough has risen divide in half and roll out 2 crusts. Place each one on a pizza pan.
  4. Preheat oven to 425 degrees.
  5. Spread  sauce evenly over each crust (divide 1 14 oz. jar sauce in half). 
  6. Place an even layer of sliced mushrooms on top of the sauce.
  7. Sprinkle 1 - 1/2 cups of chopped arugula on top of the mushrooms.
  8. add 1 - 1/2 cups of shredded mozzarella cheese on top of arugula.
  9. Bake pizzas for 12 minutes or until cheese is bubbly.
  10. Sprinkle 1/4 cup of Romano cheese, 1 tsp. of Italian seasoning and 1 tsp. red pepper flakes on top of each pizza.
  11. Cut into slices and serve.


Recipe Notes
Feel free to substitute a different green such as spinach or Swiss chard for the arugula if you like.
Parmesan cheese can be used in place of the Romano if necessary.
